Meals-On-The-Go: Zucchini Banana Bread Overnight Oats
Looking for the perfect on-the-go, plant-powered Breakfast?? I’m such a fan of Mason Jar Meals. This can be prepared the night before and is ready to go whenever you are. These make for great at-home breakfasts for kids and adults alike, but can also be grabbed as you’re running out the door. Have a long commute? These are very handy to eat on the train/bus or noshing at the office before kicking the day off. I also love these as mid-morning and mid-afternoon snacks. You can make a few days in advance, keep ‘em in the fridge, throw ‘em into an insulated cool bag and enjoy a healthy and satisfying meal when time allows for a little break.
Zucchini Banana Bread Overnight Oats
3/4 cup Oats (quick or traditional)
3/4 cup Unsweetened Almond Milk
1 tbsp Ground Flax Seed
1 tbsp Maple Syrup
1/4 tsp Cinnamon
1/2 Zucchini (grated)
2 tbsps Hemp Seeds
1 Banana (sliced)
- In a large bowl combine the oats, almond milk, ground flax seeds, maple syrup, cinnamon, grated zucchini (aim for about 1/2 cup per serving) and hemp seeds. Stir well to mix and then store covered in the fridge overnight.
- To prep / serve, add a large spoonful or two of the oat mixture into two 8oz mason jars. Add a layer of sliced banana and another layer of oats. Top with more sliced banana, an extra sprinkle of hemp seeds and cinnamon. Enjoy them cold, or warm them up for a minute in the microwave.
Like Make-Ahead Meals? Keeps well in the fridge for up to 3 days.
Extra Note on Zucchini... Consistency is best when excess water from zucchini has been removed. Wrap in a kitchen towel and give a few good squeezes!
