Meals-On-The-Go: Lemon Chia Pudding

Looking for the perfect on-the-go, plant-powered Breakfast?? I’m such a fan of Mason Jar Meals. This can be prepared the night before and is ready to go whenever you are. These make for great at-home breakfasts for kids and adults alike, but can also be grabbed as you’re running out the door. Have a long commute? These are very handy to eat on the train/bus or noshing at the office before kicking the day off. I also love these as mid-morning and mid-afternoon snacks, chia seeds are not only little morsels of energy but they’re also deeply hydrating and keep you feeling full for hours! You can make a few days in advance, keep ‘em in the fridge, throw ‘em into an insulated cool bag and enjoy a healthy and satisfying meal when time allows for a little break.

Lemon Chia Pudding

Ingredients:

  • 1 1/2 cups Unsweetened Almond Milk

  • 2 Tbsp Lemon Juice (+more to taste)

  • 2 Tbsp Maple Syrup (optional)

  • 2 tsps Vanilla Extract

  • 6 Tbsp Chia Seeds


How to:

- In a large bowl, combine the almond milk, lemon juice, maple syrup and vanilla extract. Whisk in the chia seeds and mix well. Let sit in the fridge overnight or for at least 4 hours.

- To serve, divide between 2 8oz mason jars and enjoy at your leisure!


Notes:

Like Toppings? Try adding fresh berries, sliced kiwi, coconut flakes, pumpkin seeds, hemp seeds, almonds, sliced banana, lemon zest....

Like Make-Ahead Meals? Keeps well in the fridge for 3 to 4 days.

Want to Make them in Mason Jars Directly? Go for it! Consistency may differ between jars as the chia seeds develop. Place half of the ingredients in each 8oz jar and mix well to avoid clumps.
