Raspberry Nice Cream

INGREDIENTS:

  • 4 BANANAS (peeled, sliced into 1/2 inch thick coins and frozen)
  • 1/4 CUP unsweetened ALMOND MILK (or soy, oat or even water)
  • 1/4 CUP MAPLE SYRUP (or two pitted and soaked (10 mins warm water) dates)
  • 1 CUP FROZEN RASPBERRIES

 

DIRECTIONS:

Pop all ingredients into your high-speed blender or food processor and blend on the lowest setting. If it solidifies, shuffle the ingredients around. Blend again. Shuffle. Blend. Do the shuffle/blend dance a few times until completely blended and able to jack it up to a higher setting to make sure there are no lumps. If it needs a bit more liquid, add it after you've been through this process a few times.

If you have an ice cream maker pour it in and follow manufacturer recommendations. If you don't have an ice cream maker, pour the mixture into a freezer safe container and freeze for 30 minutes (or more).

When ready to eat, scoop out and enjoy!! Add berries, fresh mint, a slice of dried lemon and/or a splash of your favorite tipple.

 

SIDE NOTES:

Very easy to make this into anything you like. Skip the raspberries and instead add dark chocolate pieces and fresh mint or some fresh dates and a little Himalayan pink salt. Try a little almond butter with a teaspoon of cacao powder, endless possibilities!!
