It wasn't that long ago that whenever I'd find wilted or questionable produce in the fridge I would toss it. Such a waste. Nowadays I either throw it in the Instant Pot and make a lovely vegetable soup or I blend that shit up in the Vitamix and make a killer smoothie.
When the weather is cold I find myself drinking fewer smoothies as they sway to the colder side but when you throw in ginger, turmeric, cinnamon or any other warming spice it takes on a whole new characteristic and actually aids in digestion, calms inflammation and really packs a flavorful punch. As a busy mama it's such a quick way to load up on nutrients and stay hydrated.
- wilted and browning rainbow chard (really bad bits cut off)
- a few good sections of celery
- the remaining dregs of a purple cabbage
- a pear that was dry and saggy on the outside
- half a pruning zucchini
- 1 cup of water
- 1 inch piece of peeled ginger
- juice of half a lemon.
Honestly - it was so delicious!!
Now, if they're in a terrible state or have mold growing on them you obviously should not eat them but I bet a lot of you toss produce that's perfectly good and still loaded with nutrients just because it looks a bit sad and wrinkly.
Stop. Chop. and Blend!!!
