Busy Day Dinner

This is my go-to, busy day, can't think what to make for dinner - pasta dish. It's so easy, as healthy as a bowl of pasta gets and packed with flavor!!

Fill a roasting pan with whatever veggies you have - our usual suspects are cherry tomatoes, broccoli and zucchini. Drizzle a little olive oil, a few cracks of salt and herbs de Provence (or whatever floats your boat) and pop in the oven for 25 minutes on 350°. While that's cooking away boil a pot of water and throw in Trader Joe's Organic Brown Rice Penne. Monitor you veg timing and cook the pasta for exactly 9 minutes (stirring multiple times throughout cooking). Toss with roasted veggies, a little splash of olive oil (I love garlic oil on this) and finish with some homemade vegan parmesan sprinkled on top and (optional) chili flakes.

Vegan Parmesan Recipe:

  • 3/4 cup raw cashews
  • 3 tablespoons nooch (nutritional yeast)
  • a few really good grinds or a heavy pinch of salt
  • 1/4 teaspoon garlic powder (optional)

Blend the above ingredients in your food processor until a fine meal is achieved et voila - Vegan Parmesan!! Sprinkle on everything!!


This is a fan favorite in our house. The wee girl asks for it daily and I oblige weekly.
