2 Minute Leftovers Salad
- Organic Baby Spinach
- (leftover) roasted sweet potatoes
- black beans (from BPA free can),
- tahini / parsley / cilantro dressing I made the other night
- sprinkled with hemp seeds and chia seeds because I believe every meal is an opportunity to throw a few extra morsels of goodness into it.
Very easy to make - stuff your hand into a bag of baby spinach - pull out enough to fill a bowl 1/2 way. Open a can of black beans. Scoop out 1/3 of the can into a colander and rinse. Pour over spinach. Next remove whatever vegetable leftovers you may have in the fridge (less than 3 days old) and drop into the bowl. Sprinkle seeds, nuts or any other yummy and healthy morsels you like on salads.
For dressing - you could just squeeze a lemon over it and be done but if you feel like being fancy:
Trader Joe's makes a killer Tahini Sauce (already with garlic in it). Take a healthy scoop of that and drop it into your blender. Add some fresh cilantro and parsley and a little bit of water and blend until it reaches your desired consistency. Make extra and keeps for 3-4 more days.
